Farm-Raised Bulk Beef

At Pleasant Valley Pastures, our cattle are raised on lush pasture, supplemented with our own farm-grown hay and carefully sourced grain from a local feed mill. We focus on raising healthy cattle with excellent marbling, tenderness, and flavor while practicing responsible animal care every step of the way.
Whether you're feeding a growing family, meal prepping, or simply want to know exactly where your food comes from, purchasing a quarter, half, or whole beef is one of the most economical ways to enjoy high-quality beef year-round.
What You'll Receive
Every beef is custom processed to your family's preferences by our USDA-inspected processor.
Depending on the share you purchase, you'll receive a variety of premium cuts, including:
- Ribeye Steaks
- New York Strip Steaks
- Filet Mignon
- Sirloin Steaks
- T-Bone and Porterhouse Steaks (whole beef)
- Roast varieties
- Brisket
- Short Ribs
- Stew Beef
- Ground Beef
A cut sheet will be provided by the butcher so you can choose steak thickness, roast sizes, ground beef package sizes, and other processing preferences.
Estimated Take-Home Beef
Because every animal is different, these are estimated packaged weights:
Quarter Beef
- Approximately 100–130 pounds of packaged beef
- Recommended freezer space: 4–5 cubic feet
Half Beef
- Approximately 200–260 pounds of packaged beef
- Recommended freezer space: 8–10 cubic feet
Whole Beef
- Approximately 400–520 pounds of packaged beef
- Recommended freezer space: 16–20 cubic feet
What can you expect to pay?
Our beef is $6.00 per pound based on hanging weight.
A non-refundable deposit reserves your animal and processing appointment.
Processing fees are not included in our beef price and are paid directly to the USDA processor when you pick up your order.
We intentionally keep these costs separate because we believe in complete transparency. The processing fee is not a charge from Pleasant Valley Pastures—it is the cost of custom cutting, vacuum sealing, labeling, freezing, and packaging your beef according to your preferences.
By paying the processor directly, you only pay for the services performed on your animal.
What Is Hanging Weight?
Hanging weight is the weight of the animal after harvest, once the hide, head, feet, and internal organs have been removed.
Bulk beef is traditionally sold using hanging weight throughout the beef industry because every customer chooses different cutting instructions, which affects the final packaged weight.
Most customers take home approximately 60–65% of the hanging weight as packaged beef, depending on their cutting selections.

Frequently Asked Questions
When do I pay the balance?
The remaining balance for your beef is due before you pick up the finished product at the processor. Processing fees are paid separately to the processor when you pick up your order.
How long will beef last in the freezer?
Properly vacuum-sealed beef will maintain excellent quality for approximately 12–24 months when stored in a deep freezer.
Can I customize my cuts?
Yes. You'll complete a cut sheet with the processor so your beef is packaged exactly how you'd like it. The processor that we work with does accept customer requests, you just need to call and ask!
When will my beef be ready?
After processing, beef is dry-aged and packaged before pickup. We'll notify you when your order is ready. Average turnaround time is two or three weeks, but dry-aging can take some additional time. The processor will reach out directly to let you know when it is ready for pickup.
